We have 4 people in our house and bought a conventional water heating unit to match that. However, we are large consumers of hot water and this thing cannot keep up. As a result we are shopping for a new one. The tankless model intrigues me.

They are set to a moderate temp of your choosing and you don't have to use the cold normal water side again. There is no longer super heated temp to cause burns, which is helpful if you have children around. What do they cost? At present tankless water heaters cost as low as $400 plus installation, depending on size and volume of water-heating demand, and are widely out there through a lot of propane retailers and plumbing professionals. Expect to spend at least $600 though because of labor and you won't want the smallest one they make.
